Chicken Barley Soup with Vegetables
Makes 6 servings
8 cups chicken stock
4 cups water
1 teaspoon marjoram
1 tablespoon fresh rosemary, chopped
2 tablespoons fresh parsley, chopped
1 medium onion, sliced
1 cup carrots, sliced
2 cups cooked chicken breasts, diced
1 russet potato, peeled and cubed
1 cup broccoli, chopped
1/2 cup barley
Salt, to taste
Pepper, to taste
1. In a large pot, combine chicken stock, water, marjoram, rosemary, and parsley. Simmer for 15 minutes.
2. Add onion, carrots, cooked chicken, potato, broccoli, and barley. Add salt and pepper to taste. Simmer over low heat for 35 to 45 minutes, stirring occasionally. Serve.
