Sweet Potato Chewy Bars
3⁄4 cup cooking oil
1 cup coconut
1 teaspoon vanilla
1 16-ounce box dark brown sugar
2 cups Bisquick
1 cup chopped pecans
1 cup finely shredded sweet potatoes
Combine all ingredients and pour into an oblong pan (9”x13”). Bake 45 minutes at 350 F. Cool and cut into 12 squares.
